Fennel and Paprika-Spiced Turkey Patties

There have been a few changes around here lately. My time working at Bon Appétit on a regular basis has come to an end. Although I will miss working in the test kitchen, I am really happy to be back home with the kids. The last few weeks have been incredibly cold and snowy. School was closed the last 3 Mondays along with several delays. It’s been nice to hunker down, focus on together time with the boys and be here to make hot chocolate when they come inside from playing in the snow.

I’ve been thinking a lot about why I began this journey and where I want to go from here. I’m motivated to use all of the incredible knowledge and experience I’ve gained in culinary school and at the magazine to develop recipes for this site and on a professional basis. With that in mind, I am excited to begin contributing recipes to Skinnytaste.

Skinnytaste is a wildly popular website started by my friend, Gina Homolka. Her debut cookbook was released this year and is currently on the New York Times best sellers list. Gina’s focus is on healthy, flavorful foods. After working in the test kitchen for 8 months and eating a ton of delicious, yet incredibly rich foods, I have gained more than a few pounds. I recently renewed my subscription to Weight Watchers to focus on heathy eating habits.

I used the Weight Watchers program after my last two children were born and have always enjoyed the balanced approach and focus on creating good long-term eating habits versus instant gratification. I’m excited to start contributing weight watchers-friendly recipes to Skinnytaste. With the balanced approach in mind, you will still see me developing dessert recipes and other splurges here on my site. At the end of the day, it is important to enjoy life and food is a big part of that for us. Everything in moderation has always been my philosophy.

Today’s recipe is for Fennel and Paprika-Spiced Turkey patties. They are seared off to create the char and flavor similar to that which you would get from a grill. I enjoyed mine over a bed of lettuce with some blackened red peppers. Gina made hers for breakfast with some eggs. Either way is delicious and each patty is only 3 pts!
