Fresh Farmer's Market Salad

  • Burrata Mozzarella (about 1 lb)
  • Arugala, large bunch
  • 2 Heirloom tomatoes, sliced (different colors)
  • 1 peach, sliced
  • 4 slices of prosciutto
  • Blaze fig balsamic glaze (available at Amazon if your market doesn't sell it), for drizzling
  • Olive oil, for drizzling
  • Fresh cracked pepper and sea salt, to taste
  • 4 eggs, cooked to your liking (optional)
  1. Place arugula on the bottom of the plate and burrata in the center on top
  2. Layer tomato slices and peaches around the burrata
  3. Place the prociutto on top
  4. If adding egg, portion out the salad onto four plates and lay the egg on top, adding additional fresh salt and pepper
