Skirt Steak Souvlaki Slider

Marinate the skirt steak at least 1 hour and up to 24 hours for maximum flavor.
Ingredients
  • 1.5 lb marinated skirt steak, trimmed
  • 1 red onion, sliced thin and marinated in 1 tbl white vinegar in a shallow dish for about 10 minutes
  • ½ C Tzatziki Sauce (I usually have Hannah's in the fridge. I buy it from Costco and it is Gluten Free. You can also make your own.)
  • Small salad of chopped romaine lettuce (1 head), Tomato (2-3) and Yellow Pepper (1) topped with feta cheese crumbles (1/2 cup)
  • 4 Schar Gluten Free Classic White Rolls* (or any bun of your choice)
  • Steak Marinade
  • 3 tbl soy sauce
  • 1 tbl worcestershire sauce
  • 1 tbl canola oil
  • 2 cloves garlic, minced
  • ¼ tsp cumin
  • salt and pepper
  • *Schar Gluten Free Classic White Rolls are peanut free, however, they contain lupine protein, which can be a risk for those with peanut allergies. My peanut allergic son has tolerated them well but, since he is not gluten free, I usually opt to give him regular hamburger rolls. UDI's has gluten free hamburger buns that do not have lupine but they do have eggs.
Instructions
  1. Mix together marinade and put it with trimmed steak in an air-tight ziploc bag. Place in refrigerator for 1 hour and up to 24 hours.
  2. Heat up grill or grill pan
  3. Assemble chopped greek salad
  4. Place vinegar-marinated onions on foil and on the grill
  5. Place skirt steak on grill and cook to desired doneness
  6. Toast hamburger buns on top rack of grill or in a toaster if you are using a grill pan
  7. Assemble sliders by placing skirt steak on bun, adding about 1-2 tbl of tzatziki, topping with grilled onions and chopped salad with feta cheese
  8. Dig in!
