Fresh Farmer's Market Salad

Serves: 4
- Burrata Mozzarella (about 1 lb)
- Arugala, large bunch
- 2 Heirloom tomatoes, sliced (different colors)
- 1 peach, sliced
- 4 slices of prosciutto
- Blaze fig balsamic glaze (available at Amazon if your market doesn't sell it), for drizzling
- Olive oil, for drizzling
- Fresh cracked pepper and sea salt, to taste
- 4 eggs, cooked to your liking (optional)
- Place arugula on the bottom of the plate and burrata in the center on top
- Layer tomato slices and peaches around the burrata
- Place the prociutto on top
- If adding egg, portion out the salad onto four plates and lay the egg on top, adding additional fresh salt and pepper
