Balsamic and Mint Berries with Olive Oil and Lemon Whipped Cream

  • 2 16 oz container of strawberries, hulled and sliced
  • 4 tbl balsamic vinegar
  • 2 tsp honey (1/2 tsp if strawberries are very ripe)
  • 4-5 turns of fresh ground cracked pepper
  • 8 mint leaves, chopped, plus extra for garnish
  • 2 cups heavy cream
  • ¼ cup sugar
  • 2 tsp olive oil
  • zest from ½ lemon, plus additional for garnish
  1. Put strawberries in a bowl or plastic container and add balsamic, honey, pepper and mint. Toss around a bit, cover and refrigerate for 1 hour
  2. When ready to serve, put heavy cream and sugar in bowl of stand mixer with whisk attachment or in a bowl with hand mixer and whip until cream thickens and stiff peaks begin to form (about 5-7 minutes)
  3. Fold in olive oil and lemon zest
  4. Put macerated strawberries into serving dish and top with a dollop of whipped cream
  5. Garnish with mint and a little bit of lemon zest
  6. Enjoy
